The main event:
Lemon Scented Salmon (adapted from http://www.thefitcook.net/1/post/2011/03/lemon-scented-salmon.html)For this I had to get roommate Henry to help me out because I have never cooked with a broiler, and I'm glad I did because apparently broilers make me very nervous. The recipe did not say whether to preheat the broiler to high or low, so we started out at low and finished it with a couple minutes on the top oven rack at high.
To top the salmon I made a Yogurt Dill Sauce (adapted from here http://www.myrecipes.com/recipe/roasted-salmon-with-dill-yogurt-sauce-10000001215063/) I made some slight changes to this recipe and did not use the cucumber and added more dill. This was partially due to the fact that Charlie had extra fresh dill and really what else were we going to do with it. But it was delicious and im glad we had the abundance of it.
In typical style i had some asparagus laying around so we added that into the mix. I always cook asparagus in the oven the same way, coat (lightly) with olive oil, pepper, and garlic powder then put in the oven at 400 for 10-12 minutes. (Feel free to add a little lemon juice, but for this dish, there was already a ton of lemon flavor going on)
So put everything together (add in some brilliant planning, brought on by 2 glasses of Fire Road Sav Blanc) and dinner is served.
This was a great Sunday around the dinner table with friends, and not at the Johnny's...which to be quite honest i still haven't recovered from. But at least we all got t-shirts?
